Meal Plan Ideas: Summer Lunch in the Tropics

So school started this week! The class I’m in right now is called Meal Management. I was super excited for this class. It turned out to be a little more basic than I thought it would be – more focused on shopping, costs, timing, etc., than designing nutritional content based on outside factors.

It’s definitely still a lot of fun, though!

We’ll be split in group and cooking/serving three meals for others in the class: an informal lunch, a semi-formal lunch, and a formal “event.”

For practice for these bigger assignments, we had to plan three lunch menus on a theme for today. I decided to use “Summer Lunch in the Tropics” as my theme (in case you couldn’t guess!), and honestly, writing them and finding the recipes was one of the most enjoyable hours of my week.

I’m not going anywhere tropical on vacation this summer, but with these menus, I can certainly pretend there’s soft white sand between my toes and an ocean breeze in the air.
